Overnight Breakfast Bake with Ham, Cheese, and Croissants

Delicious ham and cheese croissant breakfast casserole, perfect for a crowd!
Ingredients:
  • butter-flavored cooking spray
  • 2 large croissants
  • 0.5 cup shredded Gruyere cheese
  • 1 cup diced cooked ham
  • 6 large eggs
  • 0.75 cup milk
  • 0.5 cup sour cream
  • 0.25 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 1 tablespoon Dijon mustard
  • 2 tablespoons chopped green onions
Instructions:
  • Coat an 8x8-inch baking pan with cooking spray.
  • Dice croissants into 1-inch cubes (about 4 cups, loosely packed) and layer them at the base of the pan. Evenly scatter cheese and ham on top.
  • In a bowl, whisk together eggs, milk, sour cream, Dijon mustard, salt, and pepper until smooth and well combined.
  • Evenly drizzle the egg mixture over the croissants, cheese, and ham.
  • Seal with aluminum foil and chill in the fridge for 8 hours.
  • Allow the dish to come to room temperature on the counter before baking. Preheat the oven to 350 degrees F (175 degrees C).
  • Bake uncovered in the center of the preheated oven for 45-55 minutes until the casserole is set and a knife inserted in the middle comes out clean.
  • Slice into serving portions and sprinkle with freshly chopped green onions for a pop of color and flavor.
