Simple low-fat pasta, perfect for a quick dinner.
Ingredients:
  • 500g spaghetti (see tip)
  • olive oil cooking spray
  • 3 medium zucchini, trimmed, grated
  • 3 tomatoes, diced
  • 200g 97% fat-free shaved leg ham, chopped
  • 40.00 ml baby capers, rinsed
  • 65.63 gm lemon juice
  • 18.20 gm extra-virgin olive oil
  • shaved parmesan cheese,
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions until al dente. Drain and keep warm in the pan.
  • Spray a large non-stick frying pan with oil and heat over medium-high heat. Cook zucchini for 2 to 3 minutes until tender and bright green. Mix in with the pasta.
  • Combine tomatoes, ham, and capers in a sizzling pan for 2 minutes until warmed. Mix with pasta, lemon juice, and oil. Season with salt and pepper, toss, and serve with a sprinkle of parmesan.
