Veggie-packed, low-fat fritter perfect for picky eaters.
Ingredients:
  • 250g packet microwave brown rice
  • 75.00 gm self-raising flour
  • 2 eggs, lightly beaten
  • 128.75 gm reduced-fat milk
  • 165g leg ham
  • 1 large carrot, peeled, grated
  • 1 large zucchini, grated
  • 4 green onions, thinly sliced
  • 125.00 ml grated extra-light tasty cheese
  • olive oil cooking spray
  • 125.00 ml reduced-fat tzatziki dip
  • 30g baby rocket
Instructions:
  • Prepare rice as instructed on the packet. In a large bowl, sieve flour and season with salt and pepper. Gently whisk eggs and milk in a jug, then pour into the flour mixture and whisk until smooth. Fold in cooked rice, ham, carrot, zucchini, green onions, and cheese until well combined.
  • Prepare a 22cm non-stick frying pan by spraying it with oil and heating it over medium heat. Pour the rice mixture into the pan, smooth the surface, and cook for 8 to 10 minutes until the mixture begins to set and the edges start to brown. Remove from heat.
  • Preheat the grill on medium heat. Place the fritter in the pan under the grill and cook for about 5 minutes until it's light golden and set in the center. Gently loosen the edges with a spatula, then let the fritter sit in the pan for 3 to 4 minutes before transferring to a board to cut into wedges.
  • Place the fritters on plates, generously top with tzatziki and rocket, sprinkle with pepper, and serve.
