Ham frittatas

Turn leftover roast dinner into a delicious frittata.
Ingredients:
  • 200g leftover roast pumpkin, chopped
  • 200g leftover roast potato, chopped
  • 9 eggs, lightly beaten
  • 11.80 gm dijon mustard
  • 30g baby spinach leaves, finely chopped
  • 100g leftover sliced ham, chopped
  • 62.50 ml freshly grated parmesan
Instructions:
  • Preheat the oven to 180°C (160°C fan). Grease a 12-hole muffin pan (1/3-cup capacity) and line each hole with a 12cm square of baking paper.
  • In each muffin hole, layer pumpkin and potato. Combine eggs and mustard, then mix in spinach. Season the mixture and pour into each muffin hole. Gently push ham into the egg and sprinkle parmesan on top. Bake for 20 minutes until golden and set. Enjoy either warm or cold.
