Delicious quinoa bites packed with eggs, zucchini, cheese, and ham - perfect any time of day!
Ingredients:
  • 1.5 cups water
  • 0.75 cup quinoa, rinsed and drained
  • 2 egg whites
  • 1 cup shredded zucchini
  • 1 cup shredded Swiss cheese
  • 0.5 cup diced ham
  • 0.25 cup chopped fresh parsley
  • 2 tablespoons grated Parmesan cheese
  • 0.25 teaspoon ground white pepper
Instructions:
  • Heat your oven to a toasty 400 degrees F (200 degrees C) and give 6 muffin cups a nice coating of grease.
  • In a saucepan, bring the quinoa and water to a boil. Then, cover with a lid, reduce heat to simmer on medium-low, and cook for 15 to 20 minutes until the quinoa is tender and all the water is absorbed.
  • Mix together the cooked quinoa, eggs, egg whites, zucchini, Swiss cheese, ham, parsley, Parmesan cheese, and white pepper until fully incorporated in a large bowl. Divide the mixture evenly among the muffin cups.
  • Bake until the frittata edges turn golden brown, approximately 30 minutes in a preheated oven. Let it cool in the pan for at least 5 minutes before serving. Enjoy hot or cold.
