Ham with marmalade glaze

Indulge in a festive tradition with a magnificent caramelized holiday ham.
Ingredients:
  • 2.25kg leg of ham
  • 170g marmalade
  • 21.00 gm fresh orange juice
  • 23.40 gm dijon mustard
  • Salt and cracked black pepper
  • Whole cloves, to garnish
Instructions:
  • Preheat your oven to 180°C. Remove the rind from the ham, being careful not to trim off excess fat. Score the fat in a diamond pattern using a small sharp knife, about 5mm deep, ensuring not to cut through to the meat.
  • Combine the marmalade, orange juice, mustard, garlic, salt, and pepper in a small saucepan over low heat. Stir until the marmalade has melted, the mixture is well combined, and just starts to bubble.
  • Coat the ham with the glaze and insert a clove into the center of each fat diamond.
  • Place the ham on a rack in a baking dish, adding enough water to cover the base. Bake for 25 minutes, brushing with glaze until golden and caramelised. Let it rest for 15 minutes, then slice and enjoy warm or cold.
