Savory hamburger stroganoff with creamy mushroom sauce, onions, and parsley over tender egg noodles.
Ingredients:
  • Butter
  • 1 pound ground chuck beef
  • Salt and pepper
  • 1 yellow onion, chopped (about 1 cup)
  • 8 ounces sliced cremini mushrooms (can substitute button mushrooms), sliced
  • 1/3 cup of dry sherry, dry white wine, or water
  • 1/2 cup chopped parsley, loosely packed
  • 1 1/4 cups full fat sour cream (room temperature)
  • 1 teaspoon lemon juice
  • 1/4 teaspoon paprika or more to taste
  • 8 ounces egg noodles
Instructions:
  • Bring a generously salted pot of water to a boil for cooking the pasta.
  • Brown the ground beef: Heat a large sauté pan over medium-high heat. Melt 1 teaspoon of butter, then add the ground beef in batches to avoid overcrowding. Sprinkle salt over the meat and allow it to brown without stirring. Flip the meat once the first side is browned, then remove and set aside. Repeat the process, adding more butter if needed. Finally, drain any excess fat from the pan.
  • Sauté the onions in a tablespoon of olive oil or butter until soft, about 5 minutes. Remove the onions from the pan and add them to the meat.
  • Add the pasta to the boiling, salted water following the specific cooking times on the package.
  • Sauté mushrooms to golden perfection: In a pan over medium-high heat, melt a tablespoon of butter. Add sliced mushrooms and sauté until beautifully browned (around 4 minutes). Deglaze the pan with sherry, scraping up any browned bits. Allow the sherry to reduce by half, then lower the heat to low.
  • Whisk in sour cream and paprika until smooth, remove pan from heat. Return to very low heat, avoiding boiling the sour cream. If needed, add a few tablespoons of water. Mix in lemon juice, salt to taste, meat, onions, and chopped parsley. Adjust seasonings with salt, pepper, or paprika as desired.
  • For serving: Keep the stroganoff warm while the noodles cook. Once noodles are al dente, drain and serve the hamburger stroganoff over them.
