Spicy harissa hummus made with canned chickpeas, tahini, perfect for entertaining guests.
Ingredients:
  • 2 tablespoons harissa powder
  • 3 cups low-sodium chickpeas, drained and liquid reserved
  • 0.33333334326744 cup extra virgin olive oil, or more as needed
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice, or more as needed
  • 2 cloves garlic
  • 8 Kalamata olives
  • 2 tablespoons chopped fresh cilantro
  • 0.125 teaspoon harissa powder, or to taste
Instructions:
  • Mix harissa powder and 1 teaspoon of chickpea liquid in a bowl until a smooth paste forms, adding more liquid as necessary. Set aside.
  • Set aside 1/2 cup of whole chickpeas for garnish. Place the rest of the chickpeas in a food processor. Combine with 1/3 cup of olive oil, tahini, 1 tablespoon of lemon juice, and garlic; blend until creamy. Stir in reserved harissa paste and additional chickpea liquid as necessary for a creamy texture. Season to taste with more olive oil and lemon juice for a smooth, nutty, and slightly spicy flavor that's perfectly balanced.
  • Spoon hummus into a serving dish. Sprinkle with reserved 1/2 cup chickpeas, olives, cilantro, harissa powder, and drizzle with any remaining olive oil. Serve at room temperature.
