Indulge in tropical Hawaiian banana and pineapple pancakes drizzled with a speedy pineapple brown sugar syrup.
Ingredients:
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1.5 cups coconut milk
  • 2 eggs
  • 1 tablespoon vegetable oil
  • 0.5 cup crushed pineapple
  • 1 medium banana, chopped
  • 0.5 cup brown sugar
  • 0.25 cup butter
  • 1 (8 ounce) can pineapple tidbits in juice, drained and juice reserved
Instructions:
  • Combine flour, baking powder, baking soda, and salt in a bowl. Incorporate coconut milk, eggs, and oil; mix well. Gently fold in pineapple and banana until just combined; be careful not to overmix.
  • Combine brown sugar and butter in a saucepan over medium heat until melted. Stir in pineapple tidbits and 1 tablespoon of reserved pineapple juice, then bring to a boil. Reduce heat and simmer until slightly thickened, about 3 to 5 minutes.
  • Preheat the griddle to a perfect 325 degrees F (165 degrees C). Ladle 1/4-cup portions of batter onto the sizzling griddle. Watch for bubbles to form, approximately in 3 minutes. Gently turn over and continue cooking until fully set, about 5 more minutes.
  • Top the pancakes with the sweet and tangy pineapple topping.
