Elevate SPAM by pan-frying it till crispy, then enjoy in tasty tacos topped with pineapple and red pepper.
Ingredients:
  • Dad Add: Habañero Guacamole
  • 1 habañero pepper, seeded and minced
  • 1/4 cup minced red onion
  • 2 tablespoons minced cilantro
  • 1 lime, juice only
  • 1/2 teaspoon salt
  • 2 large ripe avocados
  • Tacos
  • 1/2 tablespoon olive oil
  • 1 (12-ounce) container SPAM, sliced into matchsticks
  • 2 cups fresh pineapple, chopped
  • 1 red pepper, sliced into matchsticks
  • 1/2 head of green cabbage, shredded (about 2 cups)
  • 4 ounces queso fresco, crumbled
  • 1 cup sour cream
  • Fresh cilantro, garnish
  • 12 small flour tortillas
Instructions:
  • For the Dad's Spicy Guacamole: Mix minced habañero, red onion, cilantro, lime juice, and salt in a medium bowl. Mash with a fork. Incorporate ripe avocados until creamy yet chunky. Enjoy as a dippable treat! Store with plastic wrap on the surface in the fridge to keep fresh.
  • Prepare the taco filling by heating olive oil in a large skillet over medium-high heat. Cook SPAM strips until crispy and browned, about 10 minutes, stirring occasionally. Remove strips and add pineapple and red peppers. Cook until peppers soften slightly and pineapple caramelizes, for 6 to 8 minutes. Return SPAM strips to the skillet, toss to combine, and keep warm until ready to serve.
  • Prepare the tacos: Heat tortillas by wrapping them in moist paper towels and microwaving for 10 seconds. Spread sour cream (and/or guacamole) on each tortilla. Add shredded cabbage, 2-3 strips of crispy SPAM, and seared pineapple and red pepper. Sprinkle with queso fresco and cilantro. Serve immediately while hot!
