Exotic pineapple-coconut tart: stunning and scrumptious.
Ingredients:
  • 1.75 cups all-purpose flour
  • 0.5 cup confectioners' sugar
  • 2 tablespoons cornstarch
  • 1 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 cup pineapple preserves
  • 1.5 cups flaked coconut
  • 0.33333000540733 cup confectioners' sugar for decoration
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine butter, vanilla, and confectioners' sugar in a large bowl until smooth. Sift flour and cornstarch together. Stir in the flour mixture until dough forms. Roll into 1-inch balls, press dough into mini muffin cups, shaping into cups.
  • Place 1 teaspoon of pineapple preserves in each cup. Combine sugar and egg in a small bowl until smooth, then mix in the flaked coconut. Spoon 1 teaspoon of the coconut mixture onto each pineapple-filled tart. Bake in a preheated oven for 25 to 30 minutes until cookie crusts are lightly golden. Allow tarts to cool in the pan for at least 15 minutes before gently tapping mini muffin pans to release them. Dust with confectioners' sugar before serving.
