Shine at tea time with delicious cookies.
Ingredients:
  • 74.25 gm sugar
  • 20.00 gm cornflour
  • 40.00 ml plain flour
  • 20.00 gm self-raising flour
  • 189.38 gm thickened cream
  • 12.00 gm icing sugar mixture
  • 82.50 ml roughly chopped roasted hazelnuts
  • 125g fresh strawberries, roughly chopped
  • Icing sugar for dusting
Instructions:
  • Preheat your oven to 180°C and gently grease 12 star-shaped pans.
  • Whisk together eggs and sugar until the mixture is thick and pale.
  • Sift dry ingredients three times, gently mix into the egg mixture. Divide the batter equally among pans. Bake for around 20 minutes or until the cakes spring back when touched. Quickly invert onto wire racks to cool.
  • Whip the cream and icing sugar until soft peaks form, then gently fold in the hazelnuts and strawberries.
  • Spread a delectable cream mixture on 6 luscious cakes and then crown them with the remaining cakes. For an added touch of elegance, serve with a sprinkle of icing sugar and a handful of fresh berries, if desired.
