Healthier Amish Friendship Bread Starter

Healthier sweet bread starter using low-fat milk and white whole wheat flour. Share excess starter with friends.
Ingredients:
  • 1 (.25 ounce) package active dry yeast
  • 0.25 cup warm water (110 degrees F/45 degrees C)
  • 1 cup all-purpose flour
  • 1 cup white sugar
  • 1 cup low-fat milk
  • 1 cup white whole wheat flour
  • 0.5 cup all-purpose flour
  • 0.5 cup whole wheat flour
Instructions:
  • In a small bowl, mix water and yeast. Allow it to stand for 10 minutes. In a 2-quart container, combine all-purpose flour and sugar. Mix well to prevent lumps when adding milk. Slowly incorporate milk and the yeast mixture. Loosely cover and let sit until bubbly. This marks the beginning of day 1 in the 10-day cycle. Keep covered at room temperature.
  • Day 2-4: Give your starter a gentle stir with a spoon. Day 5: Mix in 1 cup white whole wheat flour, 1 cup sugar, and 1 cup milk. Days 6-9: Simply stir your mixture.
  • Mix in 1/2 cup each of all-purpose and white whole wheat flour, along with 1 cup of sugar and 1 cup of milk. Take out 1 cup for your first bread, share 2 cups with friends along with this recipe and your preferred Amish Bread recipe. Store the remaining 1 cup of starter in the refrigerator or begin the 10-day process anew from step 2.
