Whip up classy whole wheat crepes for a healthier breakfast or brunch.
Ingredients:
  • 1 cup white whole wheat flour
  • 2 eggs
  • 0.5 cup low-fat (1%) milk
  • 0.5 cup water
  • 0.25 teaspoon salt
  • 2 tablespoons butter, melted
  • 0.5 cup non-fat plain Greek yogurt
  • 0.25 cup maple syrup
  • 0.5 cup blueberries
Instructions:
  • In a large mixing bowl, blend flour and eggs with a whisk. Slowly incorporate milk and water while stirring. Add butter and salt, then beat until the mixture is smooth.
  • Preheat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop 1/4 cup of batter onto the griddle, then swirl the pan to spread the batter evenly.
  • Cook the crepe until the bottom turns a light golden brown, approximately 2 minutes. Use a spatula to gently release it from the pan, then flip and cook the other side. Serve hot with a side of yogurt, maple syrup, and fresh blueberries.
