Healthier peanut butter cookies with applesauce for a lighter, more delicious twist.
Ingredients:
  • 0.5 cup unsalted butter
  • 1 cup crunchy peanut butter
  • 0.25 cup applesauce
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 4 egg whites
  • 2.5 cups all-purpose flour
  • 1.5 teaspoons baking soda
Instructions:
  • Preheat your oven to 375°F (190°C).
  • In a large bowl, use an electric mixer to blend together butter, peanut butter, applesauce, white sugar, and brown sugar until smooth. Then, add eggs and continue to beat until smooth.
  • Combine the flour, baking powder, and baking soda in a separate bowl, then mix it into the peanut butter batter. Chill the batter in the refrigerator for 1 hour.
  • Take portions of dough and roll them into walnut-sized balls before spacing them 2 inches apart on ungreased baking sheets. Gently flatten each ball with a fork, creating a classic crisscross pattern.
  • Bake in a preheated oven until the edges of the cookies turn golden brown, which should take around 10 minutes.
