Upgrade classic ham-and-potato soup with carrots, green beans, and non-fat milk for a healthier and delicious twist.
Ingredients:
  • 3.5 cups peeled and diced potatoes
  • 0.5 cup chopped carrots
  • 0.5 cup chopped green beans
  • 0.33333334326744 cup diced celery
  • 0.33333334326744 cup finely chopped onion
  • 0.75 cup diced cooked ham
  • 3.25 cups water
  • 2 tablespoons chicken bouillon granules
  • 1 teaspoon ground white pepper, or to taste
  • 5 tablespoons butter
  • 5 tablespoons all-purpose flour
  • 2 cups nonfat milk
Instructions:
  • In a large stockpot, mix together potatoes, carrots, green beans, celery, onion, ham, and water. Bring to a boil and simmer until potatoes are tender, about 10-15 minutes. Add chicken bouillon and pepper to taste.
  • In a separate saucepan over medium-low heat, melt butter. Whisk in flour with a fork and cook, stirring constantly, until thickened, for about 1 minute. Gradually pour in milk, stirring continuously to prevent lumps until all milk is incorporated. Keep stirring until thickened, for 4 to 5 minutes.
  • Pour the creamy milk mixture into the stockpot and simmer the soup until piping hot, around 5 minutes. Serve right away.
