Healthier eggplant slices coated in egg whites and whole wheat bread crumbs, baked to crispy perfection.
Ingredients:
  • 1 whole egg
  • 3 egg whites
  • 1 tablespoon water
  • 3 eggplant, peeled and thinly sliced
  • 2 cups whole wheat bread crumbs
  • 6 cups spaghetti sauce, divided
  • 0.75 pound part-skim mozzarella cheese, shredded and divided
  • 0.5 cup grated Parmesan cheese, divided
  • 0.5 teaspoon dried basil
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a shallow bowl, whisk together egg, egg whites, and water. Dip eggplant slices in the egg mixture, then coat with breadcrumbs. Arrange in a single layer on a baking sheet and bake in a preheated oven until tender, about 7 to 10 minutes per side.
  • - Cover the bottom of a 9x13-inch baking dish with spaghetti sauce. - Layer eggplant slices over the sauce. - Sprinkle with mozzarella and Parmesan cheeses. - Repeat the layers, ending with cheeses. - Finish by sprinkling basil on top.
  • Bake until beautifully golden brown in a preheated oven for approximately 35 minutes.
