Simple and delicious whole wheat white cake, lightly sweetened and perfect on its own with a sprinkle of powdered sugar or cocoa.
Ingredients:
  • 0.5 cup butter
  • 2 teaspoons vanilla extract
  • 1.5 cups whole wheat pastry flour
  • 1.75 teaspoons baking powder
  • 0.75 cup low-fat (1%) milk
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 9-inch square pan by greasing and flouring it.
  • Using an electric mixer, cream butter and sugar in a large bowl until light, fluffy, and pale in color. Add eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in vanilla with the final egg. In a separate bowl, combine flour and baking powder, then add to the butter mixture until fully mixed. Stir in milk until batter is smooth. Transfer batter into the prepared pan.
  • Bake in the preheated oven for 30-40 minutes, until the cake springs back when touched.
