Simple, healthier oatmeal cookies.
Ingredients:
  • 1.25 cups reduced fat margarine
  • 0.75 cup packed brown sugar
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • 0.5 cup all-purpose flour
  • 1 teaspoon baking soda
  • 3 cups rolled oats
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfect baking environment.
  • In a large bowl, mix the margarine, white sugar, and brown sugar until smooth. Add the egg whites one at a time, then mix in the vanilla. Stir in the flour and baking soda, then fold in the rolled oats. Spoon teaspoonfuls of dough onto ungreased cookie sheets.
  • Bake in the preheated oven for 8 to 10 minutes. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
