Family-friendly turkey sloppy joes for a healthier twist.
Ingredients:
  • 2 celery sticks, finely chopped
  • 1 brown onion, finely chopped
  • 1 large carrot, finely chopped
  • 1 small red capsicum, deseeded, finely chopped
  • 2 garlic cloves, crushed
  • 500g turkey mince
  • 400g can diced tomatoes
  • 125ml (1/2 cup) chicken style liquid stock or water
  • 70g (1/4 cup) tomato paste
  • 2 tsp dried Italian herbs
  • 6 soy and linseed sourdough rolls, split, toasted
  • 12 baby gem lettuce leaves
  • 1 small red onion, thinly sliced
  • 6 large dill pickles, thin sliced lengthways
  • Vegetable chips, to serve, optional
Instructions:
  • In a large frying pan over medium heat, heat the oil until shimmering. Add celery, brown onion, carrot, capsicum, and garlic. Cook, stirring frequently, for 8-10 minutes until vegetables are tender.
  • Turn up the heat to high and add the minced meat. Cook for 5 minutes, using a wooden spoon to break up the meat until it's browned. Stir in the tomato, stock or water, tomato paste, and Italian herbs. Bring it to a simmer, then lower the heat and let it simmer for 15 minutes. Season to taste.
  • Prepare individual serving plates by arranging the roll bases. Place fresh lettuce leaves on top, followed by the savory mince mixture, pickles, and slices of red onion. Finish by placing the bread tops and serve alongside a side of crispy chips.
