Upgrade sloppy joes with lean ground turkey, onion, bell pepper, tomato, lemon juice, and fresh parsley for a healthier, more flavorful twist.
Ingredients:
  • 1 teaspoon extra-virgin olive oil
  • 1.5 pounds ground turkey
  • 1 tomato, chopped
  • 1 small onion, chopped
  • 0.75 green bell pepper, chopped
  • 1 pinch red pepper flakes
  • 4 ounces tomato paste
  • 6 hamburger buns, split and toasted
  • 6 slices American cheese
Instructions:
  • In a pot over medium heat, sauté garlic in olive oil until fragrant, about 2 minutes. Add ground turkey, cover, and cook until browned, stirring occasionally to break into small pieces, 3 to 5 minutes.
  • Combine tomato, onion, green bell pepper, parsley, and red pepper flakes with the turkey; season with salt and black pepper. Cook until the tomato softens for 3 to 4 minutes. Add tomato paste and lemon juice, stirring to coat the vegetables. Cover and simmer on low heat until vegetables are tender for 7 to 10 minutes. Serve on toasted hamburger buns and top with cheese.
