Savory ground beef and noodle casserole with all the flavors of Sloppy Joes in one comforting dish.
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 2 teaspoons garlic powder
  • 2 teaspoons kosher salt
  • 2 cans tomato sauce
  • 1 cup ketchup
  • 1 teaspoon yellow mustard
  • 2 tablespoons Worcestershire sauce
  • 2 cups frozen whole-kernel corn
  • 1.5 cups shredded Colby-Jack cheese

Instructions:
  • Collect all the ingredients needed and preheat the oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Cook pasta until al dente according to package directions, then drain.
  • While the pasta is cooking, heat oil in a large Dutch oven over medium-high heat. Cook the beef, stirring often to crumble, until it's no longer pink, which should take about 5 minutes.
  • Combine the onion, bell peppers, paprika, garlic powder, and salt in the pan. Cook until the vegetables are soft, stirring occasionally, for about 4 minutes.
  • Combine tomato sauce, ketchup, mustard, Worcestershire sauce, and brown sugar in a saucepan. Bring to a boil over medium-high heat, then reduce to medium and simmer until slightly thickened, stirring occasionally, for about 5 minutes.
  • Take the pot off the heat and gently mix in the cooked pasta, corn, and 3/4 cup of cheese.
  • Prepare a 9x13-inch baking dish by spraying it with cooking spray, then transfer the beef and pasta mixture into the dish. Sprinkle evenly with the remaining 3/4 cup of cheese.
  • Bake in a hot oven until bubbling and cheese is gooey, for around 20 minutes.
  • Enjoy your dish warm!
