Whip up a hearty beef casserole in just an hour to please a hungry crowd.
Ingredients:
  • cooking spray
  • 8 ounces shell macaroni
  • 1.25 cups water
  • 1 (8 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 1 (1.3 ounce) envelope Sloppy Joe seasoning mix
  • 1 (16 ounce) package cottage cheese
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • Preheat the oven to 350 degrees Fahrenheit and generously coat a 2 1/2-quart casserole with cooking spray.
  • Bring a large pot of salted water to a boil. Add shell macaroni and cook until al dente, about 8 minutes. Stir occasionally.
  • Preheat a large skillet over medium-high heat. Brown and crumble beef in the skillet for 5 to 7 minutes. Drain excess grease. Stir in water, tomato sauce, tomato paste, and seasoning mix. Simmer over low heat for 10 minutes.
  • After draining and rinsing the macaroni, layer half of it in the casserole dish. Follow with a generous spread of cottage cheese, then the savory beef mixture. Repeat the sequence of macaroni, cottage cheese, and meat layers. Finish off by covering everything with a layer of rich Cheddar cheese.
  • Place the dish in the preheated oven and let it bake until the cheese is gooey and the casserole is bubbling, which should take around 35 to 40 minutes. Enjoy hot.
