Delicious and nutritious lasagna made with turkey sausage, ground turkey, and low-fat mozzarella for a healthier twist.
Ingredients:
  • 1 pound turkey sausage
  • 0.75 pound lean ground turkey
  • 0.5 cup minced onion
  • 2 cloves garlic, crushed
  • 1 (28 ounce) can crushed tomatoes
  • 2 (6 ounce) cans tomato paste
  • 2 (6.5 ounce) cans canned tomato sauce
  • 0.5 cup water
  • 1.5 teaspoons dried basil leaves
  • 0.5 teaspoon fennel seeds
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 12 lasagna noodles
  • 16 ounces ricotta cheese
  • 0.75 pound low fat mozzarella cheese, sliced
  • 0.75 cup grated Parmesan cheese
Instructions:
  • In a Dutch oven or large skillet over medium heat, brown turkey sausage, ground turkey, onion, and garlic for about 15 minutes. Add crushed tomatoes, tomato paste, tomato sauce, and water. Season with basil, fennel seeds, Italian seasoning, pepper, and parsley. Simmer uncovered for 1 1/2 hours, stirring occasionally.
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • 1. Boil a large pot of salted water. 2. Cook lasagna in the boiling water, stirring occasionally, until al dente, for about 8 minutes. 3. Drain the lasagna.
  • First, layer 1 1/2 cups of turkey sauce at the bottom of a 9x13 baking dish. Next, place 6 noodles lengthwise over the sauce. Spread half of the ricotta over the noodles followed by a third of the mozzarella slices. Spoon another 1 1/2 cups of turkey sauce over the mozzarella and sprinkle with 1/4 cup of Parmesan cheese. Repeat the layers and finish by topping with the remaining mozzarella and Parmesan cheese. Cover with aluminum foil without touching the cheese to prevent sticking.
  • Bake in a preheated oven until the sauce is hot and the cheese is melted, for an additional 25 minutes. Remove foil and bake until the cheese turns golden brown, for another 25 minutes. Allow to cool for 15 minutes before serving.
