Ingredients:
  • 7 green apples
  • 100.00 gm almond meal
  • 165.00 ml coconut
  • 50.00 gm rolled oats
  • 32.50 gm custard powder
  • 10.00 gm ground cinnamon
  • 36.00 gm low GI cane sugar
  • 40.00 gm margarine
  • 8.80 gm vanilla essence
  • 2.50 gm ground cinnamon, extra
Instructions:
  • Preheat the oven to 160°C for the perfect cooking temperature.
  • Peel, core, and dice apples into 2 cm cubes. Add them to a saucepan and cover with boiling water. Simmer over low to medium heat for about 5 minutes until the apples are tender, but still hold their shape.
  • In another bowl, mix together almond meal, coconut, rolled oats, custard powder, ground cinnamon, and sugar.
  • Microwave the butter until melted (be careful not to boil) and then mix in the vanilla essence. Combine the melted butter and vanilla with the dry ingredients, stirring until the mixture is evenly moist and crumbly.
  • Thoroughly drain the apples and delicately mix them with extra cinnamon. Transfer to an ovenproof dish, evenly top the apples with the crumble mixture, and bake for 40 minutes or until golden brown.
