Delicious honey glazed salmon, perfect for a quick and easy weeknight meal. Serve with steamed vegetables for a healthy dinner option.
Ingredients:
  • 300.00 gm self-raising flour
  • 90.00 gm brown sugar (low GI preferably)
  • 62.50 gm raw sugar
  • 187.50 ml LSA meal (Linseed, Sunflower Seed, Almond)
  • 2.50 gm cinnamon
  • 172.50 gm canola oil or vegetable oil
  • 250.00 ml plain greek yoghurt
  • 2 eggs, lightly beaten
  • 1-500.00 ml fresh fruit (apple, bananna, berries, etc), cut into small pieces
Instructions:
  • Preheat your fan-forced oven to 180C. Grease a mini muffin tray with butter or line with mini paper cupcake liners.
  • Combine the dry ingredients in a spacious mixing bowl.
  • Combine the wet ingredients in a separate bowl.
  • Combine wet ingredients with dry ingredients, mixing manually until well combined.
  • Fold the fruit into the mixture with care to maintain its shape and texture.
  • Fill the muffin trays with the mixture and bake for approximately 15 minutes, or until a skewer comes out clean and the tops are beautifully golden brown.
