Kid-friendly balanced lunch box.
Ingredients:
  • Ham Cheese Wrap
  • 1 banana cinnamon muffin
  • 1 small bunch of grapes
  • 95g Strawberry and Raspberry Yoghurt
  • 250ml Tropical Juice
  • 1 Wholemeal & Grain Soft Wrap
  • 19.80 gm mayonnaise
  • 10g baby spinach leaves
  • 75g sliced honey leg ham
  • 30g tasty cheese
  • 150g self-raising flour
  • 1.25 gm ground cinnamon
  • 55g brown sugar
  • 130.00 gm mashed ripe banana
  • 1 Free Range Egg
  • 36.40 gm olive oil
  • 41.60 gm buttermilk
  • 18 slices banana, extra
Instructions:
  • 1. Preheat your oven to 180°C and line 6 holes of a 1/3-cup (80ml) muffin pan with paper cases. 2. In a medium bowl, mix together flour, cinnamon, sugar, mashed banana, egg, oil, and buttermilk until just combined. 3. Divide the batter evenly among the paper cases and top each with banana slices. 4. Bake for 20 minutes or until a skewer inserted in the centers comes out clean. 5. Once baked, cool the muffins on a wire rack and store in an airtight container for up to 2 days, or wrap each muffin in plastic wrap and freeze for up to 3 months.
  • On a clean work surface, lay out the wrap. Evenly spread mayonnaise over the wrap. Add spinach, ham, and cheddar on top. Roll up the wrap to seal in the filling.
  • Pack the wrap, muffin, grapes, yogurt, and juice in a cooler bag or a lunch box with an ice pack.
