Quick-cooking Irish oats, golden raisins, and chopped almonds make these cookies rich in flavor and texture.
Ingredients:
  • 1.25 cups coconut oil
  • 0.5 cup firmly packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1.5 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon coarse salt
  • 3 cups quick-cooking Irish oatmeal (such as McCann's®)
  • 1 egg, beaten
  • 0.5 cup golden raisins
  • 0.5 cup chopped almonds
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) to create the ideal cooking environment for your dish.
  • Coat 18 muffin cups with luscious coconut oil.
  • Use an electric mixer to blend coconut oil, brown sugar, and white sugar in a large bowl until creamy. Slowly incorporate the flour mixture until just combined.
  • Blend 1 egg and vanilla extract into the coconut oil mixture until smooth.
  • Combine flour, baking soda, and coarse salt in a bowl; mix into the coconut oil until a dough forms.
  • Incorporate oatmeal, raisins, and almonds into the dough, adding beaten egg as needed for moisture.
  • Fill the greased muffin cups halfway with the dough using a spoon.
  • Bake in a hot oven until the center is firm and the top is golden brown, which takes about 12 to 14 minutes.
