Indulgent heart-shaped pancakes oozing with melted chocolate between layers.
Ingredients:
  • 2 tablespoons butter, melted
  • 1 large egg, separated
  • 1.75 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon white sugar
  • 0.75 cup buttermilk
  • 2 tablespoons buttermilk, or more as needed
  • 1 teaspoon butter
  • 1 (4 ounce) bar milk chocolate, coarsely chopped
  • 1 tablespoon confectioners' sugar, or to taste
Instructions:
  • Combine velvety melted butter with a golden egg yolk in a small bowl, whisking until perfectly blended.
  • In a large bowl, combine sifted flour and baking powder with sugar. Stir in the egg-butter mixture and 3/4 cup plus 2 tablespoons of buttermilk until you achieve a smooth, thick batter. Adjust consistency by adding more buttermilk, 1 tablespoon at a time.
  • In a nonstick skillet over high heat, melt 1 teaspoon of butter. Adjust the heat to medium. Using a ladle, pour 1/8 of the batter onto the skillet. Cook until bubbles appear and edges are dry, about 3 to 4 minutes. Flip and cook until browned, approximately 2 to 3 minutes. Transfer to a warm plate. Repeat with the remaining batter, making as many pancakes as possible without overcrowding the skillet.
  • Cut out heart shapes in the center of the pancakes using a large, heart-shaped cookie cutter and remove any excess scraps.
  • Layer warm pancakes with rich, melty chocolate pieces between each one until you have a stack of heavenly goodness.
  • Dust with confectioners' sugar before serving.
