Create heart-shaped ravioli with homemade dough filled with a trio of cheeses, ideal for a romantic Valentine's Day dinner!
Ingredients:
  • 2 cups all-purpose flour, or as needed
  • 1 cup ricotta cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 1 cup water
  • 1 large egg
Instructions:
  • To make the dough, add flour to a large bowl and create a well in the center. Crack eggs into the well and gently beat them with a fork until blended. Gradually incorporate flour from the sides until well mixed.
  • Transfer the dough to a lightly floured surface and knead until smooth and elastic for 3 to 4 minutes. Cover with plastic wrap and allow to rest for at least 20 minutes.
  • Create the filling and egg wash: Combine ricotta, mozzarella, and Parmesan cheese in a bowl. Whisk together water and egg in a separate bowl.
  • Bring a pot of generously salted water to a vigorous boil.
  • While the water heats up, get the ravioli ready: Dust the work surface lightly with flour. Roll out the dough thinly and cut it using a heart-shaped cookie cutter. Brush egg wash on the edges of each heart. Put the filling in the middle of half of the hearts. Cover the filling with the remaining hearts, press down to seal the edges.
  • Cook the ravioli in batches in boiling water until they float to the top, which should take about 1 to 2 minutes. Then, continue cooking for an additional 3 to 4 minutes. Use a slotted spoon to transfer them to a colander.
