Satisfying cabbage roll soup, full of favorite flavors, simple to prepare.
Ingredients:
  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 2 medium carrots, or more to taste, peeled and sliced
  • 2 stalks celery, chopped
  • 1 (14.5 ounce) can diced fire-roasted tomatoes
  • 2 tablespoons tomato paste
  • 3 cloves garlic, chopped
  • 4 cups beef broth
  • 1 cup long grain rice, rinsed and drained
  • 1 medium head cabbage, coarsely chopped
  • 2 large bay leaves
Instructions:
  • In a Dutch oven, sauté ground beef over medium-high heat until golden brown and crumbly, for about 5 to 7 minutes. Transfer cooked beef to a bowl using a slotted spoon. Leave 2 tablespoons of grease in the pot and discard the rest.
  • In a Dutch oven over medium heat, sauté onion, carrots, and celery until softened, about 3 to 5 minutes. Mix in tomatoes, tomato paste, garlic, salt, and pepper until combined. Stir in cooked beef, beef broth, and rice, then bring to a gentle boil.
  • Add the cabbage and bay leaf into the pot. Cover and let it simmer until the cabbage is tender, which should take about 20 to 30 minutes.
