Cozy vegetarian soup with cabbage, rutabaga, and orzo pasta, effortlessly made in a slow cooker for a satisfying weekday meal.
Ingredients:
  • 0.25 large head cabbage, chopped
  • 0.25 large rutabaga, diced
  • 1.5 cups uncooked orzo pasta
  • 0.5 large onion, finely chopped
  • 1 whole head garlic, peeled and minced
  • 3 tablespoons chopped fresh dill
  • 6 cups water
  • 2 cups vegetable broth
Instructions:
  • Add the cabbage, rutabaga, orzo pasta, onion, garlic, dill, water, and vegetable broth to the slow cooker.
  • Simmer on Low heat until vegetables are tender and soup has thickened, for 5 to 9 hours with the lid on.
