Southern-style Hoppin' John: A savory blend of black-eyed peas, onion, ham hock, and rice creating a cozy and comforting pilaf.
Ingredients:
  • 1.5 cups dry black-eyed peas
  • 1 pound ham hocks
  • 1 onion, chopped
  • 0.5 teaspoon crushed red pepper flakes
  • salt and pepper to taste
  • 4 cups water
  • 1.5 cups long-grain white rice
  • 1 cup shredded smoked Cheddar cheese
Instructions:
  • In a large pan, combine peas, ham hock, onion, red pepper, salt, pepper, and water. Bring to a boil, then simmer on medium-low for 1 ½ hours.
  • Take out the ham hock, chop the meat into pieces, and put it back in the pot. Add rice and cook covered until tender for about 20 to 25 minutes. Season with salt and pepper to your liking. For extra flavor, sprinkle some shredded cheese on top. Enjoy!
