Surprise your family with love-shaped lamingtons for a sweet tea treat.
Ingredients:
  • 80ml water
  • 115g self-raising flour
  • 50g cornflour
  • 4 eggs
  • 155g caster sugar
  • 10g butter, melted
  • 325ml dessert sauce
  • 170g desiccated coconut
Instructions:
  • Preheat the oven to 180°C and grease a 23cm square cake pan. Sift the flour and cornflour together 2-3 times for a light and airy texture.
  • Whisk eggs in a bowl with an electric mixer until pale and fluffy. Gradually add sugar, 1 tablespoon at a time, while whisking, until well combined. Keep whisking until thick, pale, and a ribbon forms when lifting the beaters.
  • Sift the flours over the egg mixture and gently fold with a whisk until just combined. Combine boiling water and butter in a jug, pour down the side of the bowl, and fold gently until just combined. Pour into the pan, smooth the surface, and bake in the preheated oven for 20-25 minutes or until the cake springs back when lightly pressed in the center. Remove from the oven, turn out onto a wire rack, and let cool completely.
  • Cut heart shapes from the sponge cake using a 6cm-diameter heart-shaped pastry cutter and a small serrated knife.
  • Pour the topping into a shallow bowl and place the coconut on a plate. Dip a sponge heart into the topping, ensuring it's lightly coated. Allow excess to drip off, then roll it in coconut, gently pressing to secure. Repeat with the rest of the sponge hearts. Store in an airtight container for up to 3 days.
