Hearty Multigrain Biscuits

Quick and comforting multigrain biscuits, topped with a milk glaze, ready in 25 minutes.
Ingredients:
  • 3/4 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 3 teaspoons baking powder
  • 1/4 cup shortening
  • 1/2 cup quick-cooking or old-fashioned oats
  • About 3/4 cup fat-free (skim) milk
Instructions:
  • Preheat oven to 450°F. Combine flours, cornmeal, baking powder, and salt in a large bowl. Cut in shortening with a pastry blender or 2 knives until the mixture resembles fine crumbs. Mix in oats. Add milk gradually until the dough pulls away from the sides of the bowl and forms a ball.
  • Place the dough on a lightly floured surface and gently knead it 10 times. Roll or pat it to a thickness of 1/2 inch. Use a floured 2 1/2-inch round cutter to cut out the shapes. Arrange them on an ungreased cookie sheet, spacing about 1 inch apart for a crusty texture or touching for softer sides. Brush with milk and sprinkle with oats, if preferred.
  • Bake for 10-12 minutes until beautifully golden. Remove from the tray right away and serve warm.
