Cozy vegetable soup for chilly days, guaranteed to warm you up!
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, chopped
  • 2 garlic cloves, crushed
  • 4 shortcut rindless bacon rashers, chopped
  • 1 medium zucchini, chopped
  • 1 medium carrot, peeled, chopped
  • 3 celery stalks, trimmed, chopped
  • 600g cauliflower
  • 400g can diced tomatoes
  • 1 litre beef style liquid stock
  • 250.00 ml dried mini penne pasta
  • 62.50 ml chopped fresh basil leaves
Instructions:
  • In a saucepan over medium-high heat, sauté onion, garlic and bacon in hot oil until bacon is golden, about 3 to 5 minutes. Then, add zucchini, carrot, celery, and cauliflower, and cook until vegetables begin to brown, stirring occasionally for about 5 minutes.
  • Combine fresh tomato, flavorful stock, and 2 cups of cold water in a pot. Cover and bring to a boil, then reduce heat to low and simmer for 20 to 25 minutes until vegetables are just tender. Add pasta, season with salt and pepper, and continue to simmer uncovered for 10 minutes or until pasta is tender. Stir in fresh basil and serve.
