Craft delicious herb-crusted lamb cutlets for an exquisite meal.
Ingredients:
  • 1 garlic clove, chopped
  • 105g breadcrumbs
  • 82.50 ml coarsely chopped flat-leaf parsley
  • 2 tsp dried thyme leaves
  • 1 lemon, zested
  • 80ml olive oil
  • 2 eggs, lightly whisked
  • 35g plain flour
  • 12 Lamb cutlets, fat trimmed
  • Mashed potato, to serve
  • Snow peas, steamed, to serve
  • Lemon wedges, to serve
  • Salt & pepper, to season
Instructions:
  • Combine the garlic, breadcrumbs, parsley, thyme, lemon zest, and olive oil until well mixed. Season with salt and pepper, then transfer the mixture to a shallow bowl.
  • Prepare two shallow bowls: one for the flour and the other for the eggs. Next, coat the lamb cutlets in flour, followed by the eggs, and finish by coating them in the breadcrumb mixture.
  • In a large frypan, heat a 1cm depth of oil. Cook the cutlets in two batches for 2-3 minutes on each side until they are golden brown.
  • Plate the cutlets alongside creamy mashed potatoes, tender steamed snow peas, and tangy lemon wedges.
