Herb marinated chicken

Effortlessly marinate chicken for flavorful barbecues or a delicious dinner.
Ingredients:
  • 1 spatchcocked higher-welfare chicken about 1.6kg, or 6 chicken breasts
  • 1 bunch summer savory
  • 1 bunch fresh rosemary
  • 8 cloves garlic skins left on
  • 8 tablespoons extra virgin olive oil
  • 1 thumb-sized piece fresh root ginger
  • sea salt
  • freshly ground black pepper
  • 2 lemons washed and thinly sliced
  • 2 glasses Chardonnay
Instructions:
  • Place the chicken carcass on a roasting tray, pressing it flat. Use a pestle and mortar, or a rolling pin and metal bowl, to crush the herbs and garlic with olive oil. Rub this mixture all over the chicken and top with half the grated ginger. Marinate if time allows. Preheat the oven to 220°C/425°F/gas 7. Season the chicken, roast for 30 minutes, then add lemon slices and remaining ginger. Spoon the cooking oils over the chicken, add wine, and continue cooking for 20 minutes until golden and fully cooked. Alternatively, roast seasoned chicken breasts for 30 minutes, then rest for 10 minutes before serving.
