Herb Roasted Turkey

Roasted turkey with fragrant herbs and rich Progresso® Chicken Broth for a moist, flavorful, and delicious meal.
Ingredients:
  • 1 (12 to 14 lb) whole turkey
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 sprigs fresh sage
  • 2 sprigs oregano
  • 1 lemon, halved
  • 2 carrots, halved
  • 4 celery stalks, halved
  • 2 cartons (32 oz each) Progresso™ chicken broth
  • 4 cups water
  • 3/4 cup all-purpose flour
  • 3/4 cup butter
Instructions:
  • Preheat the oven to 375°F.
  • Prepare the turkey by washing and drying it thoroughly. Rub olive oil inside and outside. Season the outside generously with salt and pepper, pressing them in. Stuff the cavity with rosemary, thyme, sage, oregano sprigs, and lemon halves. Place a rack in a roasting pan, then place the turkey on top. Surround the turkey with carrots, celery, and herbs. Pour in the chicken broth and water over the ingredients in the pan.
  • Roast the turkey until the thigh reaches 165°F when a thermometer is inserted (avoiding the bone) and the juices run clear when pierced with a fork, approximately 2 to 2 1/2 hours. Baste with pan broth every 30 minutes. Let the turkey rest for 15 minutes after removing it from the pan before carving. Strain and keep the pan juices, discarding the vegetables.
  • Once the turkey is set aside, prepare the gravy. In a medium saucepan, cook flour and butter over medium heat for 3 to 4 minutes until a blond roux forms. Pour in the pan juices and 4 cups (1 carton) of chicken broth. Bring to a boil over high heat, then lower the heat and simmer until thickened and ready to serve.
  • Present the beautifully carved turkey alongside the rich and velvety gravy.
