"Deliciously moist turkey with flavorful stuffing tucked under the skin."
Ingredients:
  • 150g unsalted butter, plus extra to grease
  • 12 fresh bay leaves
  • 4 slices sourdough bread, crusts removed, torn
  • 1 onion, chopped
  • 20.00 ml finely grated lemon zest
  • 20.00 ml chopped thyme leaves
  • 82.50 ml flat-leaf parsley leaves
  • 6 sage leaves, chopped
  • 2 garlic cloves, chopped
  • 1.5-2kg turkey breast with skin and wingbone attached (see note)
Instructions:
  • Preheat oven to 180°C and grease a large baking dish. Melt butter with 6 bay leaves in a small pan over medium heat. Set aside.
  • Combine bread, onion, zest, herbs, and garlic in a food processor until blended. Season generously, then pour in half of the melted butter (keeping the bay leaves in the pan), and pulse until you achieve a coarse paste. Allow mixture to cool.
  • Gently separate the turkey skin to create a pocket without tearing it. Spread the stuffing mix under the skin, and then secure it in 4 or 5 spots with kitchen string.
  • Place the remaining bay leaves in the baking dish, then position the turkey on top. Brush it with some bay butter and season generously. Roast in the oven for 25 minutes, then brush with the rest of the butter. Continue baking for 35-40 minutes until golden brown and the juices run clear. Cover loosely with foil, let it rest for 15 minutes, then slice thickly before serving.
