Herb Roasted Turkey with Cranberry Gravy

Savor herb-roasted turkey with savory Progresso® broth and cranberry-sage gravy for a delightful holiday meal twist.
Ingredients:
  • 1 (12 to 14 lb) whole turkey, thawed if frozen
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 sprigs fresh sage
  • 2 sprigs fresh oregano
  • 1 lemon, halved
  • 2 carrots, halved
  • 4 celery stalks, halved
  • 1 carton (32 oz) Progresso™ chicken broth (4 cups)
  • 4 cups water
  • 2 cups sweetened dried cranberries
  • 1 cup water
  • 1/4 cup sugar
  • 2 teaspoons chopped fresh sage leaves
  • 3/4 cup all-purpose flour
  • 3/4 cup butter
Instructions:
  • Preheat oven to 375°F. Clean turkey thoroughly, pat dry, and brush with oil. Season the outside with salt and pepper, pressing it in. Fill turkey cavity with rosemary, thyme, sage, oregano sprigs, and lemon halves. Place a rack in a large roasting pan and add carrots, celery, and herbs around the turkey. Pour in 1 carton of broth and 4 cups of water.
  • Roast the turkey for 2 to 2 1/2 hours, basting every 30 minutes with pan broth until the thermometer reads at least 165°F when inserted into the thigh. Let the turkey rest for 15 minutes before carving. Strain and save the pan juices, then discard the vegetables.
  • In a 2-quart saucepan, bring cranberries, 1 cup of water, and sugar to a boil. Simmer for 20 minutes until cranberries are tender; let it cool for about 5 minutes. Blend cranberries with 2 teaspoons of sage until smooth; keep aside.
  • While the turkey is resting, prepare the cranberry gravy. In a 3-quart heavy saucepan, cook flour and butter over medium heat for 3 to 4 minutes, stirring constantly until a blond roux forms. Add the reserved pan juices, 1 carton of broth, and the pureed cranberries. Bring to a boil over high heat, then reduce heat and simmer, stirring frequently, until the gravy thickens to your liking and is ready to serve.
