Elevate weeknights with delicious, juicy salmon fillet.
Ingredients:
  • 2 slices multigrain bread, crumbed
  • 62.50 ml fresh parsley, chopped
  • 62.50 ml finely chopped chives
  • 4 x 200g salmon fillets, skin on
  • olive oil spray
  • 39.60 gm low-fat mayonnaise, to serve
  • lemon wedges, to serve
  • mixed salad leaves, to serve
Instructions:
  • Preheat your oven to 200°C and prepare a baking tray by lining it with baking paper.
  • In a bowl, mix breadcrumbs, parsley, and chives. Season both sides of the salmon fillets, then press the breadcrumb mixture onto the flesh sides of the salmon.
  • Lay the salmon, skin-side down, on a lined baking sheet. Spritz with oil. Bake until golden and fully cooked, for about 10 to 15 minutes. Enjoy with a side of mayo, lemon wedges, and salad.
