Whip up a delicious beef and pineapple salad in just 30 minutes.
Ingredients:
  • 82.50 ml fresh coriander leaves, finely chopped
  • 2 tsp finely grated ginger
  • 1 garlic clove, crushed
  • 18.20 gm olive oil
  • 2 Graze Grass-Fed Beef Scotch Fillets
  • 1/2 pineapple, peeled, cored, thinly sliced
  • 2 spring onions, thinly sliced diagonally
  • 1 Lebanese cucumber, halved, thinly sliced diagonally
  • 1 red capsicum, thinly sliced
  • 125.00 ml flat-leaf parsley
  • 125.00 ml fresh mint leaves
  • 120g pkt Baby Rocket
  • 60ml lime
  • 1/4 chilli vinaigrette
Instructions:
  • Mix together the coriander, ginger, garlic, and oil in a shallow glass or ceramic dish. Add the beef and make sure it's evenly coated.
  • Preheat your barbecue grill or chargrill to high heat. Grill the beef for 3-4 minutes on each side, or until it reaches your desired level of doneness. Remove from the grill and transfer to a plate. Cover with foil and let it rest for 5 minutes before thinly slicing.
  • Mix together the pineapple, beef, spring onion, cucumber, capsicum, parsley, mint, and rocket in a large bowl.
  • Plate the salad, sprinkle with seasoning, and generously drizzle with vinaigrette.
