Slow-Cooker Herbed Beef Roast

Set it and forget it! Prep this savory herbed roast in the morning for a delicious meal ready to enjoy when you come home.
Ingredients:
  • 3-pound beef boneless tip roast
  • 1 teaspoon salt
  • 1 teaspoon mixed dried herb leaves
  • 1/2 teaspoon pepper
  • 2 cloves garlic, finely chopped
  • 1 cup balsamic vinegar
Instructions:
  • Prepare a 12-inch skillet with a light coating of cooking spray and heat it over medium-high heat. Sear the beef in the skillet for approximately 5 minutes until all sides are beautifully browned. Season with salt, herbs, and pepper to enhance the flavors.
  • Add the garlic to a 4- to 5-quart slow cooker, followed by the beef, and then drizzle the vinegar over the beef.
  • Slow cook on low heat for 6 to 8 hours until the beef is tender. Set aside 1/4 cup of the beef juices.
  • Thinly slice half of the beef to make 3 cups. Place the slices and reserved 1/4 cup beef juices in a container for Philly Beef Sandwiches (page 77). Refrigerate the beef for up to 4 days or freeze for up to 4 months. When ready to use frozen beef, thaw in the refrigerator for about 8 hours.
  • Present the remaining half of the beef for serving.
