Herbed beef with dijon mayonnaise

Herb-smothered eye fillet - a gourmet showstopper.
Ingredients:
  • 250.00 ml firmly packed fresh flat-leaf parsley leaves
  • 82.50 ml chopped fresh chives
  • 6 green onions, chopped
  • 4 garlic cloves, peeled
  • 6 anchovy fillets, drained
  • 45.50 gm olive oil
  • 1.2kg beef eye fillet, trimmed
  • 247.50 gm whole-egg mayonnaise
  • 11.80 gm dijon mustard
  • 21.00 gm lemon juice
Instructions:
  • Prepare a flavorful dijon mayonnaise by mixing together mayonnaise, mustard, lemon juice, and 2 tablespoons of cold water in a bowl. Season with pepper, cover, and refrigerate for later use.
  • Preheat the oven to 220°C and line a large roasting pan with baking paper. In a food processor, combine parsley, chives, green onions, garlic, anchovies, and 2 tablespoons of oil. Add a pinch of pepper and pulse until a textured paste forms. Set aside.
  • Tie beef with kitchen string evenly. Massage the remaining oil onto the beef. In a large non-stick pan over high heat, sear beef for 2 minutes on each side. Transfer beef to a prepared pan and generously spread parsley mixture over it.
  • Roast for 20 to 25 minutes until medium-rare or to your desired doneness. Transfer to a plate to cool completely before covering with plastic wrap and refrigerating.
  • Let the beef sit at room temperature until it reaches a perfect tenderness, then slice thinly. Serve alongside a dollop of dijon mayonnaise for a delightful flavor combination.
