Elevate beef dinner with savory prosciutto infusion.
Ingredients:
  • 60g butter, softened
  • 20.00 ml chopped fresh rosemary leaves
  • 62.50 ml chopped fresh flat-leaf parsley leaves
  • 1.5kg beef eye fillet, trimmed
  • 16 slices prosciutto
  • 247.50 gm red wine
Instructions:
  • Heat oven to 200°C/180°C fan-forced. Lightly grease a large roasting pan. Mix butter, garlic, rosemary, and parsley in a bowl. Massage mixture onto beef.
  • Lay a 30cm x 35cm piece of baking paper flat with a short end facing you. Arrange 8 slices of prosciutto lengthways in a row on the short end of the paper, overlapping slightly. Create another row with the remaining prosciutto, overlapping the first row slightly.
  • Lay the beef with the short end facing you. Wrap the beef tightly with prosciutto using the baking paper as a guide, then carefully remove the paper.
  • Place the beef in the pan and roast for 35 minutes. Afterward, pour wine into the pan and continue roasting for an additional 40 minutes for a medium cook, or longer to your desired doneness. Once cooked, transfer the beef to a plate, cover loosely with foil, and let it rest for 5 minutes before serving.
  • While the flavors meld together beautifully, place pan over medium heat. Stir and cook for 5 minutes or until the wine mixture is reduced by half. Serve the beef with the luscious wine reduction.
