A mouthwatering veggie-filled dish that even picky eaters love. Zucchini, carrots, cabbage, red pepper, onions, and garlic make a tasty and easy filling.
Ingredients:
  • 1 carrot, grated
  • 1.5 teaspoons rapid rise yeast
  • 0.5 cup warm water (110 degrees F to 115 degrees F)
  • 3 tablespoons white sugar
  • 1 egg
  • 0.5 cup whole wheat flour
  • 1.5 cups bread flour, or as needed
  • 1 pound ground pork
  • 1 (1 ounce) package ranch dressing mix (such as Hidden Valley Ranch®)
  • 1 cup finely chopped cabbage
  • 1 small zucchini, grated
  • 0.5 cup red bell pepper, finely chopped
  • 1 teaspoon minced garlic, or to taste
  • 1 tablespoon butter, melted
Instructions:
  • Combine yeast and warm water in a large bowl and let sit for 5 minutes until foamy. Mix in sugar, egg, salt, and whole wheat flour using an electric mixer for 3 minutes. Gradually add bread flour, knead on a floured surface for 8 minutes until smooth. Oil a bowl, place the dough inside, cover, and let rise in a warm place until doubled, about 30 minutes.
  • While the dough is rising, heat a large skillet over medium heat. Cook the pork until crumbly, browned, and no longer pink, then drain excess grease. Stir in ranch dressing mix until the meat is coated. Add cabbage, zucchini, onion, red bell pepper, carrot, and garlic. Cook until vegetables are tender and most liquid evaporates, about 10 minutes. Season with salt and pepper. Set aside.
  • Press down the dough gently and transfer it to a floured surface. Divide the dough into four equal pieces using a knife without tearing it. Roll out each piece into an 8-inch square, then cut them into four smaller squares. Fill the center of each square with about 3 tablespoonfuls of pork filling. Fold the corners over the filling and pinch to seal, using a toothpick if necessary. Grease a baking sheet. Arrange the pouches on the baking sheet, making sure they're 3 inches apart. Cover the pouches with a damp cloth and let them rise in a warm place until doubled in size, around 30 minutes.
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Bake until golden brown in the preheated oven, around 15 minutes. Take out of the pan, remove toothpicks, and brush each pocket with melted butter. Serve hot.
