Wholesome high-fiber muffins with whole wheat flour, cinnamon, apples, and sweetened with maple syrup and brown sugar. Perfect for a quick and satisfying breakfast!
Ingredients:
  • cooking spray
  • 2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1 cup finely chopped apples
  • 0.75 cup nonfat milk
  • 0.25 cup vegetable oil
  • 0.25 cup maple syrup
  • 1 egg, beaten
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously grease 12 muffin cups with cooking spray.
  • Combine the whole wheat flour, baking powder, cinnamon, and salt in a separate bowl.
  • In a separate bowl, combine apples, nonfat milk, vegetable oil, maple syrup, and brown sugar. Gently fold in the egg. Pour this mixture into the flour mixture and stir until the batter is lumpy and just moistened.
  • Carefully fill the muffin cups with batter up to 2/3 full using a spoon.
  • Bake in the preheated oven for about 20 minutes or until a toothpick inserted into the center comes out clean. Let it cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
