Whip up deliciously nutritious energy bites with oats, peanut butter, honey, flax seeds, and coconut for a satisfying snack on the move.
Ingredients:
  • 2 cups rolled oats
  • 1 cup peanut butter
  • 0.66666668653488 cup honey
  • 0.5 cup dark chocolate chips
  • 0.5 cup ground flax seeds
  • 0.5 cup chocolate-flavored protein powder
  • 0.5 cup unsweetened shredded coconut
  • 2 tablespoons chia seeds
  • 1 teaspoon coconut extract
  • 0.25 cup chopped coffee beans
  • 2 tablespoons cocoa powder (such as Fry's®), or more as needed
Instructions:
  • Combine oats, peanut butter, honey, dark chocolate chips, flax seeds, protein powder, coconut, chia seeds, and coconut extract in a large bowl, then gently incorporate coffee beans. Shape into 1-inch balls.
  • In a small bowl, generously coat each ball by rolling it in cocoa powder.
