Hit ‘n’ run traybaked chicken

Effortlessly flavorful chicken traybake made easy in the oven.
Ingredients:
  • 4 large ripe tomatoes
  • 2 red onions
  • 1 red pepper
  • 1 yellow pepper
  • 6 free-range chicken thighs skin off, bone out
  • 4 cloves of garlic
  • ½ a bunch of fresh thyme
  • 1 teaspoon smoked paprika
  • olive oil
  • 2 tablespoons balsamic vinegar
Instructions:
  • Preheat the oven to 180ºC/350ºF/gas 4. Quarter the tomatoes and place them in a large baking dish along with onions, peppers, and chicken thighs. Add smashed garlic, thyme leaves, paprika, 2 tbsp oil, balsamic, salt, and pepper. Mix everything well and spread it out evenly in the dish. Roast for about 1 hour until the chicken is golden, basting it with the cooking juices a few times. Serve with a green salad and your choice of side like rice, polenta, or crusty bread.
